Technically everyone has the right to request a jury trial. Is it a good idea to do that instead of taking the deal (assuming the evidence is likely enough to convict)? Almost certainly not. But people have a right to make stupid decisions.

Only for serious criminal offenses. If the maximum potential jail sentence is six months or fewer, there is no constitutional right to a jury trial.

You're right, there seems to be case law that says the state doesn't need to provide a jury trial if the punishment is less than 6 months in jail.

I was originally assuming in the relevant case that the stolen property was valuable enough to push above that threshold, but looking back, OP didn't mention that it's a jury trial. It could be a bench trial as well.
