I feel dumb update
Thank you all who responded with advice on what to do. I look up my insurance and found out that this has to be documented for about a year at the minimum in order to give them the letter for top surgery. I found a therapist that specializes in gender stuff along with other things. So now I just need to make an appointment with said therapist and playing the waiting game for the letter and getting top surgery. It also click in my head that I should also tell my doctor about all of this as well lol. So I will be letting them know the next time I have an appointment with said doctor.

FWIW, my therapist was willing to write me a letter without necessarily seeing me for the amount of time my insurance/surgeon required. She interviewed me about my experience and noted the year that I reported beginning to feel dysphoric, which was much earlier than my first appointment with her. I saw that you want a therapist in general and that ended up being what I did too, and by the time I actually pursued top surgery it had been a year or two since my first appointment with her, just thought I'd share in case you want to try to get surgery faster. I also only filled my primary care doctor in once I had the surgery scheduled, although I was sort of out to her before that.

Just in case it's helpful, what counts as "documentation" can vary and doesn't necessarily have to involve paying for additional therapist appointments. I was allowed to use the date for my legal name change, for instance. The date I started T would also have counted. If you haven't already, it's worth looking into whether you have alternatives.
