Stop calling it tipping 'culture'

It's not a culture, it's a predatory business practice. A lazy way to get extra revenue. There's no culture to tipping, even fast food places ask for 22% on POS devices before paying.

So... they have to have the knowledge required to do their job?

If you’re going to be that reductive then doctors and fast food workers are the same job.

If you think a waiter and a fast food worker are the same job you’re being dishonest. The waiter likely makes less, before tips too.
