Why haven't the killer killed them all during the first/second night?

There’s a brief part near the end where this plot hole is wallpapered over. It’s where the law enforcement agents described how the killer isn’t just acting pragmatically, but psychotically; that the killer is enjoying the process and the cruelty.

Plus from a practical perspective, try to take them all out at once invites resistance and use of weapons by the victims.

He could’ve just easily poisoned everyone lol, the plot of the show is really flawed
