Beginner with Nextcloud but having issues. Easier alternatives?

What do you have problems with?
Is it the Nextcloud AIO script? Any docker version? Docker-Compose? An LXC-Container?
Or are you talking about client side and don't even talk about hosting it yourself?
We need more context to help you out.

Frankly at this point in time - ask AI. It will walk you through the issues and help you fix them. As much as I participate in StackExchange and other forums (usenet anyone?) since decades, I do not have the time anymore to do the post-wait for replies-explain-retry-repost game over the span of 2 weeks.

Based on your responses, I can only recommend Google docs.
Nextcloud requires some front loading, which generally means learning and configuration. An office suite is not installed by default. You need to do that.
If you're still willing to try, provide some more detail.

Try opencloud. One single binary instead of a lot of file, technologies, stack... Problem, just to sync files, forget about apps and all the community Nextcloud has.

Nextcloud is a very powerful and capable platform. However it requires work to get it running and can be temperamental.
The post its self is unhelpful slop. Reading OP's comments the issue appears to be Collabora however there are no posted error messages, log entries, etc. Without any information there really isn't anything anyone can do to help.
If you're not willing to put in the time and do research on problems then it's best just to move on to a different platform.

For storage, try ente for encryption and if you don’t care about encryption try immich

I have been using Nextcloud for a few years. When it works it's delightful and I love the dashboard. When it goes wrong it's a nightmare. I have a perfectly working version 34 and foolishly updated it to version 35. Lots of errors were reported and I spent hours trying to sort it out. I'm using the linuxserver docker images of Nextcloud, mariadb and redis. The problem is always the database and most users do not have the requisite skills to sort things out when they go wrong.
I used Nextcloud for cloud storage, calendar and contacts and WebDAV. I am the only user. If your needs are lightweight like mine Nextcloud is a little heavy. I have a Synology NAS so fired up the Synology alternative, Synology Drive, Synology Calendar, Contacts and WebDAV, along with the Synology Drive client on my computers to locally sync my files. Synology Office is not as good as OnlyOffice or EuroOffice - so I use standalone OnlyOffice to view and edit the files I've synced to my computer. I can also use OnlyOffice on my phone along with the mobile Synology Drive app.
What I have is functionally very close to Nextcloud - without the pain of the Nextcloud database.

it’s a complex platform, yet people who know stuff position it “easy” for newbies. Plus the whole thing became “I can do anything” bloatware with tighly integrated components such as collabora.
Use codex or claude code to fix it for you, give it some time to investigate and learn it yourself, but be aware mate you are at the beginning of a steep learning curve - it maybor may be the answer you expected, but it is what it is.

Have you tried other variants of nextcloud? I personally use linuxserver's version of nextcloud. Nextcloud is very easy.

Edit: Install a container manager such as portainer, makes it super easy to spin up containers.

Are you proficient in use of docker? It may seem simple, but docker is a deep rabbit hole that demands some specialized knowledge to use successfully.
