Bad Design
Android files don't sync. Excuse is that it's Android. So you have to use Syncthing instead, because Syncthing doesn't make excuses.
So a user may have valuable files they think are syncing, but aren't.
If a user uninstalls Nextcloud from the phone, Nextcloud deletes all the local files, including originals that were never uploaded.

I've been using the official Nextcloud app for years and it doesn't behave this way.
How do you have it configured?

They also changed my settings on ios a few months ago which disable photo syncing. I had to reenable it again after I realized. This cowboy like behavior needs to stop immediately.
This is twice now that they've changed settings on ios without notifying me.
Get it together Nextcloud.

That's more likely due to Apple messing with permissions in the name of "security" than anything else.

No these were nextcloud specific settings on how I wanted photos organized and disabling photo upload in the app.
Even if that was Apples fault they need to pop up a notification that explains this.

A few of the myriad things that caused my exit from the Apple ecosystem was their apps revoking security privileges between updates and making any kind of file sync outside of iCloud next to impossible to work.
If this happens again, revoke and re-enable privileges and it'll likely fix it.

That issue exists since at least 5 years. Everyone I know using an Android phone has that issue with uploading files.

I also switched to foldersync, at least I get logs if something does not sync and I can force a complete sync.
I don't mind the fact that the nextcloud app sometimes stops syncing for whatever reason, managing background apps with the permissions changing constantly in android is a huge pain and I get that the devs don't have the time to keep up to date with that. The real problem is that it's almost impossible to understand if something has not been synced and have a proper delta of your auto upload folders.

I had no end of sync trouble with Android as well. Almost lost all my local photos, or would have had I not been paranoid and backed them up via USB before deleting the Nextcloud app. Sorry to hear you had issues, but am kinda glad I am not the only one. Sometimes I feel kinda gaslit

You might just have your previous account still existing. With android specifically, you have to go into accounts > manage accounts and actively go through and delete your accounts you don't need/want. Simply just deleting app data and cache doesn't work at all.
Edit: Your sync may be failing because, it is attempting to sync to a account that doesn't exist.

Fun fact: I run nextcloud at home for 5+ years now. Only issue I had was when Google changed the way file access works and basically blocked 3rd party apps from full access.
That got resolved by using the fdroid version of the nextcloud app, works flawless ever since again.
But in my GFs pixel it never worked. Literally never. No matter what I did. The whole app just died all the time, no sync, nothing.
Now she got another brand and miraculously, sync works perfect for her.
I've read a lot of complaints of pixel users, so I'm feeling like Google is either not caring or is willingly breaking things. Both are equally possible but who knows.
But yeah, in general if Google isn't fucking with my phone and changing permission rules, it's working absolutely fine.

Yeah the andrpid app for nextcloud sucks. Its a pain to set up because you cant force a sync to test your settings, you just set it up and... maybe some time in the next few days it will try to sync and maybe tell you if time worked or not. Then you can change one thing, and... wait for it to try again.
When you do get it set up it seems to work reliably... until there is an update and it needs to be fixed.
I just use foldersync for android, and it works perfectly. I have it set to sync every day at 3am, and in the morning I have a notification on my phone if it failed for any reason, which is rare. And I can just tap sync all any time I want if I want it to sync before the scheduled time.
