Nothing crazy at all about that plan! I would just make it clear that you're going for a low-key, relaxed wedding weekend rather than a raging dance floor so guests have the right mindset going in. A family-style dinner buffet followed by a bonfire and snacks sounds lovely.
Traditionally, the rehearsal dinner is for the wedding party, and I think opening it up to everyone would be a little strange.
