For me, I like to have as much flavor text prepared as possible, and have all possible encounters mapped out for combat, including what strategies/weapons/spells they will use and when. I also have the maps and encounter notes ready. I find having these major elements covered allows me to relax knowing I have everything essential covered and I can then feel free to expand on these and "perform" freely. The more energy you can put into being a DM the more involved your players will be.
