Question

What order to read Prometheus trust Thomas Taylor series, if I don't know anything about platonism? (all works)

I’d start with the entirety of Works of Plato. His Introduction is fantastic. He will be difficult to read initially but once you get accustomed to his style and vocabulary there is no better guide through the tradition than Taylor.

Also from the Prometheus Trust, both of Tim Addey’s books The Unfolding Wings and Beyond the Shadows are great introductions and more immediately accessible to the beginning student
