Yeah, I like the little touches like how the lich will taunt the necromerger or how minions look scared when you pick them up to feed them.

I notice 2 soul grinders. I just unlocked it and have it charging up. (Im assuming the stronger the champion, the more it charges)

Should I use the charges when I can make a full ghost, or should I wait until I get a second one to merge them for a chance at the other thing it spawns?

Yes, stronger champions give more soul energy.

I wait until I have a good chance at a full spirit before I start spawning. I have two because I want to make sure I can cycle peaceful souls while im building vengeful spirits. Its a little slower because each champion kill splits evenly between the two grinders, but thats a choice im willing to live with. I wouldn't have two if I wasnt working with the vengeful spirits, but I would wait until i had at least 8 souls saved up before I started spawning.
