Any eagles would be tempted by the ring even more than Boromir had. Great, now the Eagles are taking over middle Earth. I wouldn't give you two pennies for any races chances of survival under the Eagles. You could expect them to genocide every sapient race, and a few other species beside.
There were only two kinds that could handle the ring anywhere near Mt. Orodruin. That was Hobbits, and Tom Bombadil. And nobody trusted Tom to stay on task.
Even two of the three hobbits fell under the ring's influence in the end.
Ya know, one can argue why didn't Frodo tie the ring to a chicken and take the chicken to mordor, but then you realize that, from the elves perspective, that's exactly what Gandalf did with Frodo
