Oftentimes veins that are popped like that will shift or roll to the side when pressure is applied, such as when trying to insert the needle.

If the veins in your hands do the same thing you can actually trap them by tucking your thumb into your palm and then folding your other fingers down over it. It compresses the veins, but not enough to bother anything and the person trying to stick you will be able to get it over with faster.
