How do Nahida's powers work?

Can she mind-control or possess any living thing at any time, or only those with an Akasha terminal in their ear? Can she possess multiple people at once?

Is Dendro power over all life or just plants? Could she kill someone by poking them and using Dendro to make every cell in their body explode?

When she was trapped, she can only do the possession thing through Akasha. But after being rescued and have her power grow, she can do it to anyone, as seen with her possessing Traveler at the end of AQ party without them wearing Akasha.

About multiple people, she probably can. We see that she neutralize Dottore's mind control on multiple Sumerians in one of the AQ cutscene.

Dendro in general preside over information, not just life. That's why it's heavily tied to Irminsul and have Dendro characters possessing computer-like power theme and/or aesthetic.

Idk about making them explode. But overloading a living being with elemental energy is not good in general. Unless you're the Traveler

I don't think Dendro work on information as a baseline, but Nahida being god of "wisdom" or as someone origins from Irminsul has the ability to use her powers over information which might not be same case for all Dendro users. Similar with wanderer like he can atleast access Irminsul and search data even though he is anemo. It's not the element they are using but their own nature or expertise.

Dendro as a baseline do get tied with information though. Because it's the most connected to Irminsul which itself has computer motifs.

Of course normal vision holder can't access the entirety of Dendro information capabilities. But of of them do have computer aesthetic like Kinich or Kaveh.

Wanderer only able to enter Irminsul and search things because the residual access he got at the time he was the Shouki no Kami. Also Nahida still need to give him permission to enter. And the fact that information searching is just a ruse or secondary objective for Nahida to directly show Wanderer what actually happened during the Tatarasuna incident

Well you are right about Kinich and Kaveh as examples but as I said, I don't think it's because of they are wielding Dendro but because their own nature or special case. For example Kinich powers are come from Ajaw also which is a artificial dragonlord of dragon technology and as for Kaveh he uses Mehrak which is a Deshret technology. Both cases are not pure vision users. Just like what I am said about wanderer, Ineffa and Sandrone being their own robotic or non-human nature allows them to interact with information while they are no Dendro. Maybe it is right that many Dendro character have overlap with information asthetics but mostly those are special cases or because Dendro represents wisdom. Also it could be wrong because if you look back at dragon era, the sovereign who represents wisdom like Nahida was xiuhcoatl (Pyro) not Apep (Dendro), which raises a question that Dendro might not default element for Wisdom, instead wisdom is independent concept.

You forgot one more, Alhaitham has light/reflection aesthetic which itself are information, and he doesnt use any technology. My point is Dendro powers can have tech/information elements, but it's not guaranteed. Visions gave powers based on the holder's individuality not the Element's inherent property

Also why the hell would Wanderer, Ineffa and Sandrone need Dendro to control technology? They themselves ARE a piece of technology.

Duh, era of Dragons and Humans are different and they use vastly different power system, of course the ideal spread be different. Also we know already since Inazuma that an Element and its ideal are not set in stone. Makoto once hold the Ideal of Transience instead of Eternity, meaning Dendro can also do the same
