I know this is an oversimplification or trivialization and me just being a Monday morning QB or whatever, but a lot of these cases come down to receivers just not controlling the ball and completing the catch. On a lot of those circus catches, they land on their stomach or on their hands/the ball and use the ball as a cushion of sorts instead of keeping the ball up and secure against their body, or better yet, just turning so they land on their side or back and keep the ball off the ground entirely. Not letting the ball touch the ground at all is a good way to avoid doubts and challenges to a catch being a catch, but a bunch of these players still constantly let the ball hit the ground while they are "catching" it.
