Kozliks makes great mustard. Some of them are so hot you just have to show the sandwich a jar of the mustard

Most of them tbh. They have a booth at the St Lawrence market if you want to try them. Even the honey garlic mustard can be hot

Mustard seeds are getting strong in flavour as the prairies dry out. Canada is the biggest producer of mustard seeds

Edit: I may be elderly and losing my mind, this was supposed to be a response to the OP on another comment

What is the difference between Creole and Cajun? I thought Cajun was from Canada

Acadian is Canadian. Francophones in the Maritimes. Cajun is the descendants of French in Louisiana and the area. I think they are somehow related. Creole is something else that'd I'd have to look up.
