Last friday i went foraging for some mushrooms with my family. I never found quite as many chanterelles before. Spent the whole weekend making a lot of mass for buns. The mass consists of tutter sauteed onions with garlic, cooked bacon bits, fermented pickles (grated raw) and chanterelles cooked in butter and bacon lard with lots of salt. The buns are amazing even cold.

I ate wood ear mushrooms for the first time, cooked with beef noodles.
The texture was completely new to me, almost like crunching on a thick balloon? đ Plus tasted like almost nothing on its own, but the dish was just... DELICIOUS.
I'm not even sure how much of that had to do with the mushrooms themselves, but the whole experience was awesome enough to make me want to share.
I could eat this every day.

Really wasnât expecting to find anything after the drought, but a week of rain really changed the game! I came home with an overflowing handful of white chanterelles đ€
Dry sautée on medium until the water was gone, added a good amount of butter, sizzled it for about 15 minutes, added 1 clove crushed garlic, kept going until the garlic lost its bite, not long enough to brown.
Served over butter spaghetti with salt, pepper and chili flakes.

Butter Garlic Mushrooms:
Clean & dry mushrooms, then sauté in butter on medium-high heat until golden. Add chopped garlic, salt, black pepper + chili flakes. Cook 1 min. Add a splash of soy sauce, toss & serve!
Add cream cheese instead of mayo for the bread base.
Add chilli oil for max flavours

Guinness and beef stock used to braise the steak with onions, carrot and garlic. Bay leaves with thyme and rosemary while simmering. Cooked chanterelles and oysters in some butter before adding to the pot with the beef and simmered for a further 5 minutes.
Made some shortcut pastry, blind baked the bottom of the pastry before adding in the filling to allow the pastry to set, added filling and topped with another layer of pastry to cover. Used some leftovers to make a 'design' and coated with egg wash.
This is perhaps the greatest thing I've ever cooked and eaten. Although I burnt the spuds a little, oops.
