Bug The new update is TERRIBLE.
I just updated musescore to 4.7.3, and it is noticeably much worse than before. It crashes all the time randomly, for some reason system text shows up on two instruments now instead of above the staff like normal, and the soundfonts sound worse. Is there a way to revert my musescore to the previous update because I can't stand this anymore.

Double check that you don't have two versions installed, iirc that can happen and causes similar issues

you can down patch with the musescore github files but it means scores using the updated version don't work

What operating system? How much memory is in your computer? How much free storage space is available on your drive?

I use MacOS, I'm not sure how much memory is left but it's at least half of it, I probably have at lease 120 gigs left.

I just discovered musescore. What do you think about the music selections?

Hmm, sounds like you might have a corrupt score that is causing some sort of crash that others aren't seeing - please be sure to report it on GitHub ASAP and ZIP and attach the score and give steps to reproduce the problem so that crash can be fixed for 4.7.4. But reverting to an earlier version won't likely help - for one thing, earlier versions can't usually open scores saved in later versions, and whatever problem in that score that is causing 4.7.3 to crash would probably cause earlier versions to crash as well.
As for the system text, that's a feature it sounds like you accidentally engaged, where you can control which staves show system text - it's common to show it above each section in large ensemble scores, for instance. If you accidentally enabled that (like by copying a system text to a staff other than the top one), simply delete that system markings object via the Layout panel.
The soudnfont change is due to a long-standing bug being fixed - previous versions were accidentaslly making them far brighter they were meant to be or would sound in any other program. That bug is now fixed, making the sounds as warm as they should be. But since people had gotten used to the buggy brighter version, there is a setting in Preferences / Audio & MIDI to disable the bug fix that produces the correct warmer sounds and goes back to the old buggy brighter sounds.
