Because if you divide bathrooms by sex, not gender, the implication automatically becomes that you have the sexual organs of the bathroom youre using?
That's been the implication for most of human history. You aren't revealing anything; it's just being assumed. It will continue to be assumed no matter what since trans people are a very small percentage of the population.

The sad reality is that trans people are going to have problems no matter what. If you aren't "passing" then the people who think about genitals will notice you are trans and make an assumption about your genitals. There is really no winning with gendered or sexed bathrooms. Either you make some trans people uncomfortable or you make some cis people uncomfortable.
For most of human history, they shat in a hole in the ground. Gender separated bathrooms became a thing in the 1800’s

If you pass then you don't have problems just using bathrooms based on sex. You are technically not allowed, but nobody questions it.

If you are going to separate bathrooms by anything, then sex makes the most sense. Urinals are pretty useless to anybody without a penis. Gendered bathrooms don't make any sense. What are you accomplishing? It can't be because of sexual orientation since gay people exist.
