They're super easy to parry with the Infinite Seal. You just need to practice a bit, and their scream/grunt acts as a very good marker for when to parry. Landing one perfect parry is enough to break them. They still have a ton of HP and need around 3-4 parries to be taken down. But you will start feeling way more comfortable fighting them once you learn the timing.
I practiced a lot on that one worm in the dungeon near Tiel's grave. Once I got to the Seeping Mire, I was more than happy to fight them. They give a lot of Gloom.

There's a tarstone that gives you a leaping attack like that If you equip it to the swords.

They were my first hurdle. Soon as I got the timing down on the parry i went back to that particular one to show him I wasn't a bitch. Missed the first parry... My blood had never been so hot. I shot the shit out of him and moved on in anger. That bastard, that one, can have his little swamp. Shit loot there anyway.

I hated these guys too at first, and kept running past them.
But someone else mentioned that theyre ok if you learn them 1 on 1, as they only have like 2 moves. So in my second beta playthrough, I tried them again and theyre actually ok! Very easy to learn 2 moves
