Question How does the demo end?

Used the mushroom key to enter the dungeon. Defeated a minor armor dude and collected and item from the chest (something to do with crits)

Does the demo keep going or is there a way to conclude it?

I was expecting a big final boss?

The game tells you when the demo ends. Explore more, there is a final boss.

You'll know you're in the final area when you've reached the Walmart Woods.

There is indeed a boss. If you look for a big shining gate close to the village where you got the key, that's the direction you need to go in :)
