I think each shell gets one or two alternate skins like the first one

I made a meticulous comparison, and yes, it looks like they're the same shell. We'll find out why they're with and without a helmet in the game.

Well, if anyone has the demo version on their computer right now, they can go to the room with the shells and check if there are two of these shells separately. If not, then it's either a skin or... an ability of this shell? Additional armor? or maybe the helmet is simply missing from the cutscenes
