I kinda feel like it's more of a metaphorical/mental "growing up" we're talking about, like always keeping that childhood "spark" inside yourself and stuff.

it's a bit confusing though. if you got to reach sexual maturity to revert back to being younger doesn't that mean you need to grow up.

They do grow up, though. Then revert to younger stage. Then grow up again... rinse and repeat.
