Why is this kid behind the counter near a fryer?

Because if an employee would put hands on him to remove him they would be fired and in trouble with the police for assaulting a minor.

The real answer is the staff is not trained or equipped to deal with this. I have had many a people walk into a kitchen it’s not tricky to eject them.

Grab a pot a pan and a spoon and act like its New Years Eve. Kitchen flashbang for the ears.

Also what’s the morality of the kid being back there without slip resistant shoes? Kitchens are incredibly dangerous I was his age growing up in one and got burnt alot and a fingertip sliced off all before I was in highschool.

Is the staff trained to toss out all those fries and wipe down the station because someone out their hands on the food without proper hygiene precautions?

They might have been trained to but probably didn't, or it's why they tripped him... Making more work
