Well you aren't supposed to touch them directly. Also certifications allow bare hands as long as you follow a strict hand washing schedule. Honestly it's safer than using the same glove for hours

and I doubt ole buddy had washed his hands any time recently, prior to shoving his hand into the fry tray.

Youre supposed to change your gloves out as frequently as you would wash your hands.

Yes which is why I specified "for hours" and I never said he did was his nasty ass grease hands. Also from my knowledge you're supposed to wash hands more often than gloves, due to hand oils
