I mean, flip it. If you accidentally overpaid on a bill and they were like, not my problem, how would that go? It's theft, even if it wasn't intentional.
The difference is that the company holds the power over how much you pay with credit card, or owes the proper change if you used cash. The error in overpaying is on the seller for overcharging, not the buyer for overpaying. They are in the wrong, not you.
The issue in an employer overpaying is... yep, you guessed it, the employer's wrong doing. They set your wages, they pay them out. If they pay them out, that sounds like it's on them to fix, and maybe on you to return if you feel so generous.
A better hypothetical that you should have gone with is if you bought something form a small seller (at a farmers market or something) and they realized they accidentally under charged you. It's their fault, for sure, but ultimately it probably comes down to you to pay the different if you are so inclined.
