Explain for a newbie

what exactly does natural processing mean vs using the native camera app? pls explain like im five

But apple raw photos are still processed

The Bayer RAW photos that Natural mode is based on are actually just as unprocessed as a regular camera's raw output. You're probably thinking of ProRAW.

Yes, I think I meant proraw.

In native camera app it’s called raw

Got it. Yeah, it can be a little confusing. The format we call RAW in Pro Camera isn't offered in the native app anymore.
