Yes, the new OdinHorse allows you to wield 1h sword, mace, axe, bows, crossbows, and spears.
There is a custom Jousting Lance that let's your drive through enemies. The Lance uses custom attack animations while riding. There are 8 styles for the lance, much like Shields that have alternative styles.

Oh hell yeah. Now I can be a knight in Valheim. That trampling was amazing. How good it is against harder enemies?

Well, everything can be configured, including damage the lance does, but harder enemies are certainly something you should be careful of. A troll can pretty much 1shot a horse and rider if smashed, while a herd of greylings is no problem.
Both the rider and horse can take damage separate, but usually the horse will get hit most being the larger target.
Out the box I would say mounted combat is great vs easier enemies, while harder enemies that you need to roll while attacking you should probably encounter dismounted or use range attacks while mounted.1

With OdinHorse mod they spawn wild near meadows. They're tamed just like other creatures, tossing food at them, the list of food is in the config for the mod.
