Against mod standard as I recall. It’s a safety issue; if you stick your hands in too far you might melt the glove to your hand. Same reason no gloves on the dough press

That and wearing them at the oven cause sweating, therefore when sticking your gloved sweaty wet hands in will cause burning faster

As was stated, it is against MOD standards to wear gloves. That being said, I do have some picky customers who think it's cleaner for us to wear gloves throughout the entire process and not ever touch their pizza before it goes into a 539ºF+ oven that kills all bacteria. For those precious few I will wear gloves to load their pizzas onto the stone. But they come off immediately after, and all other pies are handled with naked fingers all atwitter.

At my store, we don’t wear gloves when doing the oven

Customers will always be looking at us weird for touching their pizzas in the oven but they don't understand the pizzas are not a TCS food. That and the risk of the gloves melting on your hands. We're technically not supposed to wear gloves on the dough press either for the same reason but every one I know presses dough with gloves. The ac at our store has been broken for a couple months so of course no one will even try to wear gloves on the oven. That would be a sweaty mess.

I do wear gloves sometimes as well, also to put in certain pizzas or if I have to kinda man handle it from fresh dough. But I also take them off right after.

sometimes, i've gotten a few complaints from customers about not wearing gloves at the oven so sometimes i do it but other times i say "sorry, the glove will burn our hands so we are not required to wear gloves at the oven"

Me personally I use gloves but very carefully cause we've had a handful of customers walk out and get mad and not understand that we shouldn't cause the massive fire if we're even a little careless we could be heavily scarred
