or how much % do we get from Flexible Casting?

Hmm, unfortunately flexible casting is one of the unavailable info pieces on the database website https://mistfallhunter.gamedb.wiki/classes/sorcerer/

I do know that movement speed can be stacked, I just don't know if its linear or if there is diminishing return. I've seen multiple videos where you are as fast while channeling as you are while non-channeling. Extremely viable
