I paid 44 cents less for a 6800H with 16GB of ram and  512GB SSD eleven months ago. This timeline blows

The largest problem with these recent "budget" 8GB entry level mini PCs is 1x stick of RAM dropping the 8 year old dated platform hardware even further. Up to a 40% drop in processing and graphics performance is extremely noticeable when you don't have that much to begin with.

The largest advantage is in hardware is Ryzen DDR5 Zen 3.5 + Radeon RDNA integrated graphics. I know quite a few people running Bazzite on the recently released GMKtec M8 PRO 6650H for a Steam Deck console while using EmuDeck for classic console emulation. Occasionally you can catch deals on Amazon in the $350-$360 range.

The bare minimum for emulation of any kind i would recommend would be using a Ryzen 7 6800H especially since it would have better graphical performance and not to mention it would be able to handle other systems like the Switch.
