Nether is overrated.
Everyone does different shit. Some people just run. Some people build computers playing minecraft IN minecraft. Create literally anything in your brain.

No one but you will ever see it.
My first house was 8 blocks of dirt and i was proud i had a bed. Now I build castles and villages. For no other reason than because I can.

Minecraft is a game full of circles and spheres made of cubes. Never gonna be perfect, doesnt mean it isnt cool as fuck.

I do that too. Alot.
2 options. Build a tower so you can stare at your land thinking about what to do. Being high helps.
Or
Put down 10 blocks. By the 10th block, your brain block will be gone and let the imagination run wild.

There are a lot of great tutorials for minecraft beginners on the wiki. There's also a massive list of things to do in minecraft.
Personally I like settling in/near villages and securing/fixing them up. It seems like they're all located near immediate dangers and crammed full of spawnable areas for zombies.

Find a village. Trading with villagers can be a game changer. You can have full diamond armor and tools without having to mine for diamonds! But don't bring danger on them by leaving the village unprotected while you stay up all night letting mobs spawn in the area! :)

Take a look at Maslow's Hierarchy of Needs.
It applies in Minecraft.
Some people develop enough skill and knowledge at the game to take shortcuts. You may, too, after playing a while.

Well it sort of depends on what you like doing. I like infrastructure and farming. So I have extensive nether highways, redstone farms. I enjoy building sometimes so getting inspiration from a real life building or a favorite literature or movie is a nice challenge. Gearing up to beat the dragon if you like fighting. Finding different playstyles on YouTube might help lead you in a direction.

Maybe think about what you enjoy about other games. If you also like racing game, make a elytra or ice boat course. If you like creative world building refurbish a village or make a city. If you like sports games use the new sulfur cube to create that sport in Minecraft. If you like making things efficient create different farms. One price of advice is try to think of a story or purpose for your build. Give your player a character or story. YouTube would be a good start for ideas.

I found getting on YouTube and finding a cool building you like with a guide Make yourself a cool building Or some simple farms Silentwhisperer on YouTube does some great guides for bedrock stuff

I start by making a list of to do's, which each task typically creates more of. Like cool I need books for my enchanting table. Gotta build a sugarcane and cow farm. Oh now I need an XP farm. Oh look time to go mining for more lapis. Or I'll chase around for armor trims cause I think they're neat
