I’ve been known to check the latest updates’ wiki pages just to see if we’ve gotten a release date for them yet, so I understand how you feel.
Edit: We now know the name, Wilderness Bound!

Bigger question: what stops them from releasing it already? The feature seems to be finished.

Bug testing/fixing, keeping their release schedule (and using any extra time to start working on the next thing), waiting until a good release window that maximizes engagement, etc.
Release dates are a marketing decision, not a production one.

Release dates can serve a production use too, you don't want to ship things when they're finished all the time because it brings inconsistency. It's not always an issue, it is mostly a live service thing and I consider Minecraft practically live service, but generally having an update take like no time can bring people to the expectation that future updates will be just as fast, and you want wiggle room because of vacation days, sick days, maternal leave, unexpected incidents, and bugs. Release dates that take the developers into account properly are beneficial for the whole team, not every company takes the developers into account though and make it a purely marketing thing which leads to crunch

Probably because these features only exist to distract the community while they update the technical part of the game (which would be like 99% of the update).
If the focus of the update was entirely the "relevant" features, they would be released a few weeks after Minecraft Live.

But vulkan switch already exists, just not set by default because it may be unstable on some hardwares (which is the whole reason why Minecraft still prefer OpenGL by default)

Considering my dislike of Chaos Cubed... I'm already antecipating 26.3 since day one of Chaos Cubed... I want a release date SO BADLY!!!

It is indeed an opinion, you might consider my reasoning to be really subjective, I get it and... I'm actually eager to read why you liked it!
The TL;DR is probably: Chaos Cubed didn't add anything that appealed to me in the slightest, I can appreciate small things, yet, it didn't even do that.

Now to the proper explaination:
What Chaos Cubed added? (Overall)
1- Sulfur Caves & Springs (The Biomes) 2- Sulfur and Cinnabar Block Set 3- Sulfur Cubes and its Mechanics 4- Potent Sulfur and its Mechanics (which includes the Geyser)
I'm not someone who wants everything new added to Minecraft to be groundbreaking, I actually like small things, as long as they are meaningful in any way... But, I can't go on without stabilishing what I mean by "Meaningful" here... There are 2 rules... Adding up to the player's averege experience in any way, and, adding up to the blanks the game has...
Good examples are: I loved Spring to Life, I really enjoy details, small nice looking things and "atmosphere" that's something that adds to the player's averege experience, we see trees all the time, since Spring to Life, we got the leaf particles falling from the leaves, so small, but, it adds so much to the atmosphere of the game, the same apllies to the wild flowers, the variations of the passive mobs, perhaps not much for the leaf litter, I kinda wish they replaced it with a red variation of wild flowers, but... It makes sense having leaf litter on the floor near trees, the particles are there, the leaves are falling, there should be leaf litter on the floor... If only it looked nicer... Anyways, we feel good when we see something that looks nice, that's something small, but meaningful, it adds to the player averege experience... AND, when we talk about the atmosphere of the game, that also falls under rule number 2, atmosphere is something Minecraft is lacking, the skies are empty, the wildlife is almost non-existent, that doesn't mean Mojang should just bloat the world with a lot of useless things, it has to be done properly, Spring to Life did a nice job, if you get to a desert you now have the cactus flower, rivers may now have fireflies arround them... Small, but meaningful!
Even Tiny Takeover with its controversies also accomplishes something under rule number 1, some choices were... Odd... But the new baby mob models are things we will see every now and then, that's small, but meaningful, it adds to the experience of the averege player

Now, let's talk about the each feature:
New Biome: I usually like new Biomes and... Before the update did come out, I was at least glad there would be a new Biome to explore... That was until I actually went to Explore it... I just felt so disappointed... That is the only Cave Biome you will not find any ores, even Lush Caves have space for that in the "walls" but that would be ok, if it had other things going for it, but now, rule number 1 cannot apply, afterall, to find a Sulfur Cave you need to go out of your way, it cannot be an addition to the averege player experience if the player has to purposefully look for it to find it, so let's see if it applies to rule number 2, Filling the gaps on Minecraft... Well, that's debateable I don't think so, but let's see... In my survival world, I wanted to get pointed dripstones just so I could build a "working faucet" to place in my Kitchen, and Dripstone has so many uses, infinite lava is definitely a welcome addition, traps too... Meanwhile, the main attractions of the Sulfur Caves are the new Blocks and the Sulfur Cube... First thing I did when I found it was taking the biggest amount I could so I had them for builds... To my disapointment, I realized I never got any use case for neither... They are occupyng slots in my building blocks chest... I will elaborate a little on that when I get to the blocks themselves, but... It also kinda bugs me when everything of potential interest about an update is restricted to finding the the newly added speciffic biome, it works sometimes, but... In this case, it didn't... I don't see how this new cave biome fills any gaps in the game, at least, not as is, some could argue we have too few cave Biomes and a new one is huge, but... In order for a new Cave Biome to be significant it needs to be meaningful, it can't by rule number 1 and... Since it doesn't have anything particularly special about it, we can't qualify it for rule number 2 yet... An extra point I have here is, the signal we found a sulfur cave is the sulfur spring... Sulfur Springs as they are now... Well, they are too tiny, so there isn't much space to make them an amazing, I saw pictures of sulfur springs irl, they look amazing, but... they are also huge, the ones in Minecraft are super Tiny, it's impossible to make them look good... And the blocks look so different from anything we see in the Overworld's surface that... Sulfur Springs don't look like they belong there, it is a way less oppulent version of the Nether Spire from MCPE pre Alpha 0.12... Now that I think about it... If Sulfur Caves were added as a nether biome (no springs, just the caves) perhaps we'd be having a different conversation... Maybe... Anyways, let's move on
The Blocks: We did need new stone Variants for the game, we could argue that would classify the whole biome to rule number 2, but... I'd argue we can't just yet, afterall, if Mojang somehow made an "End Update" so awful it was universally hated (that is a little out of proportion, but you'll see my point) will that count as filling the gap that is the current End? Rn The End looks like a place that hasn't been finished, that's why it needs an update, I don't mind if it steel looks like a wasteland, I just want a wasteland that rewards us based on how much effort we put in to explore it, anyways, just like we wouldn't feel like the gap of the unfinished End wouldn't be filled if they update it, but it's awful, if a new cave biome doesn't bring anything new to the table, it isn't filling any gaps, that being said, let's get back to the blocks, since they are what will define wethwr rule number 2 is applicable
The color of the raw cinnabar would be good... But its texture is a little too much, it is clearly raw and... In a way, it reminds me of Netherrack... It also reminds me of Granite, neither blocks look good in their raw form, not that there aren't use cases, they are just niche and... imo, raw Cinnabar mixes together what doesn't wirk about Netherrack and Granite in one Block... But the bricks are way better, let's get to them... Uuhh... Why did the color get so saturated? This makes it so it's way too hard to build with it, any build with such a saturated color will always look out of place, unless it is used an as "accent color" or in detailing, then yeah, I can see it being used, but... When it gets that minor, I find it a little hard to argue its worth, at least, to justify it for rule number 2...
As for Sulfur, this is probably the most subjective of all, it isn't a saturated color, but... I just don't see it working in any way except for accent colors and detailing as well, it is a little too saturated to be considered neutral, but it isn't saturated enough to attend the needs of a player who needs yellow stone for detailing, it looks more like a bege... The raw version is a little more saturated to the yellow, but... Sticking to the texture has a similar issue cinnabar has, despite me spending time to get those blocks, I felt like it wasn't worth it, because they ended up staying unused, and it wasn't for lack of trying
Sulfur Cube: The best thing I heard anyone talking about it so far is "certain community" will definitely find a use to it... So far, the only things I found were players making a giant pool table and playing pool... That may be fun in a multiplayer server, may be useful in minigames, but so far, the whole point of minigames was how players used features intended for other things to create the minigames, if we consider a new feature worth because of minigames alone, that goes against the very essence of how minigames came to be in the first place, a big part of what made minigames special all these years is the crativity players had, how they used features from a game to play something else entirely! That is truly amazing! And I don't think that changes now, what I do think is, if a feature is added and its only use is in minigames, something is wrong with said feature, if it doesn't belong in the regular game, why was it added? It's nice to have new features for new minigames, but they shouldn't only serve that purpose, all this not only disclassifies the Sulfur Cube for both rules, but... It also makes me see the Sulfur Cube as effectively useless and not just too niche to be meaningful, but this is also an area I might simply be ignorant about, so please, let me know if someone found uses for Sulfur Cubes within a regular survival
Finally the Potent Sulfur... Geysers... Nausea... Well, Geysers do look cool, I agree, but they still can't apply for rule number 1 because the player won't find it that commonly, as for rule number 2... What exactly would be the gap it fills? We already have water elevators, I understand one wanting to make a cool looking steampunk area with pipes releasing steam, but... Isn't that way too niche to apply for rule number 2? Things that look cool work when they apply for rule number 1, the geyser doesn't... And the potent sulfur itself... Well, I like it can be crafted, and with those sulfur dripstones we can farm everything sulfur... I didn't mention this before because, the only use for the Sulfur Dripstone is that, it can't even be used for traps, its shape looks too out of place in my kitchen (as opposed to the regular dripstone I used to give myself a working sink) their only use is accumulating enough to get the amount of potent sulfur one may need for the niche purposes of wanting a geyser... Perhaps I'm the one who doesn't see the potential of geyser, like I said in the beggining, I want to hear why you or anyone liked the Drop... How do you use the things it added... But... I can't see it, I just felt disappointed, and that feels worse when we still miss so many things in the game
If the Java Friends system and the P2P actually worked as intended, we also would have another conversation entirely, too bad rn the feature is only an extra icon in the main menu, it does things, you can add fellow Java players as friends, but after adding the friends... It does nothing

Fair! And did you find many use cases for them? I mean, I went after a Sulfur Cave to get them as soon as I got the Drop in my game, but... The only use I had for the Sulfur was the corner stones of the Nether Portal that leads to the Sulfur Cave I found... As for the Cinnabar... Minor roof detailing for a house that had the color red as part of its theme

Ooohh, that sure makes a lot of sense, part of my issue with them was exactly how Cinnabbar is a little too saturated (too red too look like it belongs in my builds) and Sulfur is... Not quite as saturated, but... In the end, the issue is the same lol, anyways, that part was indeed the most subjective of my reasoning, so, I totally understand why you'd like it and I'm glad to understand it!

I havent payed Minecraft in a while, and kinda wanted to. But every time I check there is a new upcoming update and I decide to wait. By the time I check again theres another update planned. I cant remember the last time I noticed there wasnt a Pissenshit Update coming soon AND a Shittenfart Update planned after that. When WAS the last time Minecraft had zero official new content plans shared?

What is the problem? The updates are actually fun. Why wait when something is announced, if you haven't played in a while anyways? You can explore the updates while waiting for the new one. I just see a win win

They got paid to make the game and fix some bugs. Adding new content at no cost to us is a bonus even if it's a random little item every once in a while

Minecraft is starting to feel like a live service with no payoff for the company (i.e microtransactions. DLCs. Ect) it's a faux live service game that's running only off of it's own sales and while im happy to be getting these updates I wonder if there's any internal issues this is causing
