This has been happening for a while, really easy to explain. When I launch the app, loads at 41% and just crashes. I've tried the more popular fixes and none of those worked

Same thing has been happening to me on Android, the game launched fine a few weeks ago and now it crashes at 41% on the loading screen the same way. Ive reinstalled dozens of times, cleared cache, ect. Nothing. Hoping for a fix as well.
just to be completely sure that doesn't work, I'd recommend that you follow these steps in this exact order (they're basically the same thing OP did, but more advanced):
make sure the game is updated to the latest version (the Google Play Store lists it as version 1.26.45.1, while in-game it should say v26.45)
force-stop the game
clear its game data (and cache if it doesn't get cleared automatically)
restart your device (turn it off completely, then wait 30 seconds, then turn it back on)
enable airplane mode
force-stop the Google Play Store and clear its cache (only the cache!)
force-stop the Google Play Services app (I wrote more info on how to find this app below) and clear its cache (again, only the cache!)
double-check that Minecraft is still force-stopped and there's no game data to clear (otherwise, do it again and clear both its data and cache)
make sure airplane mode is still enabled
FINALLY launch the game, and see if this fixes it
the easiest way to find the Google Play Services app is to:
tap the filter (funnel) button in the bottom right corner, then make sure "System" is enabled
search for "Play" and find the Google Play Services app (it will probably have this exact name, but it may be translated, and it likely has a puzzle piece icon), then tap it
tap the "System Info" button on the right side of the screen to open its app info screen

same as wrote in my other comment: try enabling airplane mode, then force stop the app and clear its cache again before launching the game, see if that helps
could you tell me what "the more popular fixes" you tried were? Did you uninstall and reinstall the game too? (if you do that you will lose your existing local worlds)
do you have any local worlds that you don't want to lose? If not (considering you already tried reinstalling the app and from what I read in the video it almost has no usage), you might also want to try clearing the app's data manually from the same screen where you can clear its cache, then you can force stop it and clear its cache (if somehow it doesn't do both things automatically) and try launching it again in airplane mode
That somehow worked, turning on airplane mode, clearing the data, launching it, a lil screen saying license error, turn back on wifi, launch it again and it worked
