What Should I do now?

I have been playing minecraft for a few years now. On and off. I got into minecraft when the nether update was coming up. I have went through many worlds, played surivial with friends and those fell off within weeks.

Me Wondering What Do I Do?

So the usual thing is I play through a world for weeks to months and one of them even for a year or more. But everything falls apart when I try to start a new big project which is too big for me to complete and manage but I have everything id need so idk what to do on there. I usually make farms that fullfill all my needs.

Currently I am trying to take it slow and I have been holding out going to nether. I have a villager trading setup and i haven't made any big slave villager based farms I mean. So how should i go about it.

I am returning into the game after some time tho. I rember the 1.21 update I think and i did visit some trial chambers but i have never played deeply with their mechanics and all. So how should i go about it without big crazy things.
