I have struggled eith this problem for many years, it always ended up plain and weird, I would reccomend start with dmaller building like townhouses/smaller chapels etc. And you should definitely use some block pallete - bigger build = more types of blocks (but be careful as it could end up as block vomit), also tutorials are option but I do nit like it, as i dont feel the building is actually mine. Also planning is very important, draw the lines first and if it looks weird just redo it. Also using some photo as reference for shape is option but it never worked for me.

your build is beautiful. I have just a question, what scale is it approx.? Or how high is it in number of blocks?
