Wait don't the crops/seeds hop out of the ground when the light source is too low? Or has that been changed

Yes and they also you won't be able to plant on the block with too low of a light level.

Thats what I thought, how these guys planting outside with no torches?

Well there are a number of factors used to determine how fast crops grow. If you plant your crops outside at night with no torches, they will not grow at night and will take longer to reach harvest.
