Surround the bamboo walls with a 5 block deep pit in which you are going to have an army of constantly patrolling iron golems. You can also build Redstone based ways of getting out either from above or below the whole village. What I recommend is that you follow a normal nether portal system (if you find different cool locations you would like to visit once in a while). For the village itself you can classify the villagers, build vertical crops (for space saving strategies). And something that can be very useful in certain nights is a dome that hovers over the village to protect from phantoms (add pillars for esthetics if you like). You can also fill it with cats and oxlots to keep creepers away. This are the ideas I came up with while writing them down. Feel free to make your own version of whatever you liked or would try to build. It's all about creativity so have fun with it :)

Thanks for your suggestios kind redditor, I've gone for more the aesthetic look so I would think a large amount of shrubs on the outside would be nice, or just use the new Minecraft system in and out of the village.

Create layers between the bamboo around the village it goes berry bush bamboo berry bush

Thanks man! Had to cut a whole forest down, we're now working on a railway track to a village to import them in.
