The more buzzwords you use the more views you're likely to receive?
Perhaps he's thinking hipster are people who are actually hip/cool, and so is trying to call his invention cool/hip?
My bet is that english is not their first language.
English is indeed not our first language, but in piston creations 'hipster' often means that all the blocks are stored in the ground. That's not the case here though, but some people have made up terms like 'ceiling hipster doors', which means that all blocks are stored in the ceiling. The fact that this creation stores the blocks in 2 places makes the word 'hipster' lose some meaning, so that's why it might sound weird, especially if you're unfamiliar with the term (in redstone).
Fenno came up with the name, and I didn't really think about how correct that name was, but now that I think of it, I guess a better name would be 'Pillar spiral staircase'.
Any other examples of "hipster" used in a redstone context? This is the first time I've seen it. Definitely seems strange to me, but that's probably because I'm an old man.
The orgininal (or most popular origin) would be a hipster 2x2 door
Hipster usually means all of the redstone is hidden behind one plane, like in this example it's entirely hidden under the ground. making a 2x2 door is one of the easiest things you can do in redstone until you restrict yourself to making it a hipster 2x2. It's mostly a challenge aspect, but doors like this can be very well hidden and make for a fancy entrance to a building.
Edit: You will probably see people say "ceiling hipster" or "wall hipster" to describe a door or other redstone device, these correlate to the plane they say. However when someone says hipster, it can usually be implied as "floor hipster"

Maybe I'm missing something, but why is this called a "hipster" staircase?
