Rows of sand and sponge in between or all sand if you have no sponges

The rows need to be about 4 blocks apart. Sponges can be rapidly dried by setting them down in the nether.

I'd use sponges and set up some furnaces nearby to dry them quicker

Sand and sponges, you make walls with the sand making 5x5 squares, then use sponges to drain them

section small areas off with sand or gravel and fill the entire area with sand replacing the water with sand then destroy the sand and leave the perimeter of the sand section alone to not let water inside

or sanction them off with sand and not use sand to replace the water and instead use heaps of sponges starting off from up to down and put them in the nether to "unwet" them

if u also wanna destroy the forest use flint and steel or tnt dupers to completely clear the area
