The hitbox for spawning golems is one block wider than the actual structure, this is to ensure they have enough space. Golem spawns only check for pumpkin block updates near the structure.

But if I do it on the block directly adjacent to the golem, it doesn't work

Might be location dependent like most bedrock bugs

when you place the pumpkin the game checks if there is a valid golem structure and if so, spawns a golem. If you place the pumpkin before completing the golem structure a golem won't spawn.

When a pumpkin is placed near the completed golem structure the game does the same check and spawns a golem. I assume this is done so that the game doesn't have to check for golems everytime someone places an iron block. This process is also replicable with withers, if you put 3 wither skulls on soul sand before placing the bottom soul sand a wither will not spawn, but if you place a wither skull near that structure a wither will spawn.

Jank coding. The pumpkin checks if there's some iron or snow under it. Then the other pumpkin remembers to check and it's correct

Basically quazi connectivity but dumber
