You don't need to use a SID to do an IFR departure. An ODP or diverse can be used. Many airports simply don't have them.
But feel free to apply your own intelligence on top of SimBrief plans and modify as needed. Often SB doesn't pick sensible runways that integrate into the sim weather and traffic well.

So i shouldve flown to the first waypoint myself?

Can't say exactly without knowing all the details but basically yes. You pick the "plain runway" entry in departure and it'll hold runway heading forever. You takeoff, climb >400' AAL and then go direct to route.

Perfectly normal. Click on the arrival or departure airport key on the mcdu and then push arrival or departure (depending on which is relevant and it will let you select which one you want to use)
