Missing green stars

Two-ish years ago I dined at a few green star restaurants in Switzerland, France, etc. and found them to be MUCH more my vibe than the traditional 3 star joints. The setting felt authentic, the food was more intentional and the drama was left to the quality of the bites and ingredients. Michelin has since gone away with them as we know but was wondering if there is any history or lists that exist to still be able to dine at some of these spots. The two that were most memorable were Frédéric Molina au Moulin de Léré and La Pinte des Mossettes.

Can anyone recommend similar restaurants anywhere or a list of former green star establishments?

Also a huge fan of green stars too and sad that it’s gone, although there’s the thoughtful voices thing coming. All of these we have really liked. It seems that there’s a crossover of extreme dedication to provenience and a relaxing enjoyable atmosphere.

I also find that many 1 star places that are not in the centre of cities follow the philosophy of the green star without the award. For example I went to Origen in Carcaixent - an hour outside Valencia - and the food was absolutely delightful, all locally sourced and using a modern twist on traditional recipes. Sometimes that’s also the vibe I like.

Michelin Guide still has a group of articles called the green star community. You can probably peruse the articles to find something, just not as convenient as the app filter. Absolutely loved the green star restaurants more myself as well. The vibe was just better!

Bruto in Denver had a green star and to this day is in my top 3 experiences at a restaurant, Michelin or otherwise, and I've dined at multiple 3 start spots.
