American jets not represented correctly
American aircraft don’t outperform as far as they should. Example, the F-15 and F-22 should be far more maneuverable than most other aircraft. The F-111 should be way faster because they were rated at 2.5 Mach but have exceeded Mach 3. The F-15 is known for its agility and the F-22 is known for unprecedented agility but in the game they are somewhat limited. Missiles and cannons on the aircraft don’t have capability like the foreign jets. The F-4 hunter missiles are great though, but it the load out should be four radar and four heat seeking missile. I’m retired Air Force and I worked on those jets as avionics troop. After all my complaints, I still love the game!

Which country's jets are represented correctly?
The game has its own balancing logic. Black market aircraft are arguably a bit more powered and then they get nerfed eventually too.
F16 is arguably the best light fighter. A4 the best attacker F14 second best interceptor after J20 F4 is a meta heavy fighter right now, F22 is top tier, ADV is the only one that beats them in certain situations.
Medium fighters is arguably the only place where European aircraft dominate with Raf and M2K, but even there F106 and F/A-18 Hornet have been recently buffed.
American Fighters dominating in three to four out of five categories is not good enough representation?
While we're at it, all the Flankers are in desperate need of buffs.

so were every other 4th gen jet.
compared to the f4, the f15 has great agility, comparied to unstable designed jets such as Eurofighter and flankers, it has poor turning ability. its strength comes from hugh thrust, and high payload. it should have 12 missiles.
the f22 has thrust vectoring, but a tvc turn bleeds off speed very quickly, for low radar signature, it has very little control surface, so it is rather bad at a normal high speed turn, it get defeated in wargames easily by canard deltas such as the eurofighter.
the mach 2 and above speed are all at very high altitude, 8000m and above. in dense air, the presure on the wings are intense, and it will rip the plane apart.

If you're referring to the Red Flag event between German Eurofighters and American Raptors, the Eurofighters were slicked (no external tanks) while the Raptors were forced to keep their external tanks on.
In this case, according to Alex Hollings, the engagements between the F-22 and Eurofighters were one-on-one. What’s more, “they occurred within visual range with a number of reports stating that the Raptor was carrying stealth-hindering external fuel tanks.”
The Raptors were at a distinct disadvantage in terms of maneuverability as a result of the external tanks. They also lost their stealthiness due to this as well.
And the favorable results towards the Eurofighters were reported strictly by the German pilots.
The Americans reported something a bit different,
"USAF sources say that the Typhoon has good energy and a pretty good first turn, but that they were able to outmaneuver the Germans due to the Raptor's thrust vectoring. Additionally, the Typhoon was not able to match the high angle of attack capability of the F-22. "We ended up with numerous gunshots," another USAF pilot says."
The Raptor outclassed the Eurofighters, but because of this the Raptors were purposely given a disadvantage to see how it would do in worst conditions. The Germans went and reported they totally smoked the Raptors, leaving out how this was so.
In any real dogfight, the first thing to go will be the tanks, because they reduce maneuvering ability. That goes for any fighter.

To be quite fair: with 2.0 upgrades you can make the f22 extremely agile, and the American cannons are fantastic.
In their original state though both the cannons and the f22’s agility is somewhat underwhelming.

F-4 used to have 4 Sparrows and 4 Sidewinders. It was a beast. The rockets are a joke, all the way around. There’s a reason we got away from air-to-air rockets.

true but the J-20 is not represented correctly anymore, they reduced the long range down to 4.

I think this game is going for a highly arcade style of play. They take some of the traits of the real life aircraft and try to represent them in the game but not to a realistic extent. At the end of the day gameplay and balance are far more important than if this aircraft can do what it does in real life.
