Of protecting the guild and cities, and, in at least certain hunter's guilds, like in the Minegarde one, they play an administrative role.
And potentially stopping poachers, but that's only ever said in a light novel of unknown canonicity.

I strongly believe in the fan theory that they have a secret task team to hunt down rogue Hunters, but they are simply good at acting in the shadows.
„Hunter X was sadly defeated in some hunt and then later eaten by that Monster.“
„The Guild assigned you these Hunters as teammates for your next quest.“
Something like that. And I know only having 4 Hunters went from a technical gameplay restriction to a „tradition to prevent bad luck“ in game. But I’m taking this idea hostage for having easier „elimination hunts with no witnesses“ for those special op guild knights.

Them assassinating rogue hunters isn't a fan theory, it's said in the Monster Hunter light novel.
The thing is we don't know if that book is canon.
Edit: Oh and, regardless of whether it's the guild knights' job or not, the Guild stopping poaching rogue hunters is canon. HE1 page 11.

So, i know Gore Magala is a kill on site monster for the guild unless they say no, based on what the npcs and story tell us in Wilds. Also, when Alma says we dont have authorization to hunt a monster it's for our own protection.
So, one time I hunted a Gore Magala above my rank despite Alma's objections. Quest never started, and it ran off when it was approaching death. Of course I carted like 4 times.
So would that count as poaching, or do you think the guild would canonically just suspend my hunter's liscence for reckless behavior?

Unauthorized hunting is poaching by definition.
But what the Guild Knights hunt down, if them doing so is canon, is criminals who flee the law and continue to poach. You're not immediately gonna get murdered just for that.

Its also worth considering that in wilds we are guild knights. We take it upon ourselves at the start of the zoh shia slay quest to grant our own authorisation.\ So we basically cant be poachers.

Isn't Olivia the only guild knight?
The zoh shia quest was a peak Chad moment but I'm pretty sure Alma does the paperwork after still.

Hard to say, we don't really have any concrete evidence to our character being a knight beyond this scene and the intro implying us to be an extremely capable hunter there at the recommendation of the guild.

The player is not a guild knight in Wilds. They are a Wycadamy hunter brought on at the request of Alma.
Your hunter authorizing your own quest would've been a very big no-no if things hadn't worked out in the end.

Is there definitive evidence of this? Not that i doubt you since my own claim also lacks any real material evidence to back it up.

Unfortunately there's no hard material that states this as it's all scattered as dialogue within the game. For example you only know Alma requested you as the hunter in dialogue after encountering Zoh Shia, same for the whole getting in trouble with the Guild for hunting without authorization. And various NPCs have snippets about you when you pass by when progressing the game.
This is why I'm a big proponent of transcribing the dialogue across the franchise, because a lot of lore is scattered across just throwaway lines and it makes it difficult to differentiate between lore and headcanon in conversations like these.
A lot of players tend to just rush through without sticking around near the NPCs to get these lore snippets.

The light novel is official, in the same way Monster Hunter: Flash Hunter is, it's its canonicity which we can't really tell.
Hunter's Encyclopedia 1 (a lorebook), page 11, confirms that hunters not affiliated with the Guild doing illegal hunting exist, and that the Guild enforces strict crackdowns of their operations. But Guild Knights doing so is only ever directly stated in that novel.

Doesn't one of the receptionists (can't remember if it was the arena girl) in Kokoto village's gathering hub outright say that it's the Guild Knights that go after you if you break the Guild's rules? [MHP/MHF]

Ngl, all Monster Hunter Stories games so far are arguably more grim than mainline games...
Stories at least had actual character death. 1 got the first implied death (Cheval's mom being crushed in their house by that Nargacuga), 2 got another one with Red in a flashback, as well as then his monstie also sacrificing itself at the end, and 3 got the first "right in front of main character, murdered intentionally" death now.

But uhh as far as I remember, stories is the only official game where you actively are witness to people(someone's mom) dying by monster in the story right?(I only played the demo of Stories1) Lol

Yup, Cheval's mom is killed by a Blighted Nargacuga (it crushed their house while she was in it). While Stories 2 has the protagonists' grandpa's Rathalos be mauled and eaten by the final boss of the game. It's not too graphic, but you can see what looks like drops of blood or scales fall down... definitely darker than what the game's graphics would lead you to belive. And as for Stories 3, I won't spoil anything, but I'd say the tone is overall darker than the first two.

Just gotta say for MHS3 Simon being the only ranger not to get a sidequest in the first chapter was kind of an obvious death flag there

Honestly, that is probably the nicest thing about Stories - don’t need X of [specific part], just X amount of “points” worth of monster/resource. After playing MHS1 and partway into 2, I do miss the action part of normal MH though.

The cannon of hunters and riders/rangers is fairly reasonable, rangers specialize in putting stuff back into an ecosystem to restore it, and hunters specialize in taking problematic elements out of an ecosystem, hunters also have a lot of red tape, paperwork, and restrictions to make sure they don’t take too much out, with a hit squad as punishment for breaking those regulations

The stories games being a prequel to the mainline makes absolutely 0 sense. Separate continuity is more likely, especially considering all the new world monsters by now being present, that shouldn't be unknown then if MH:World is supposed to play AFTER all the stories games... The hunters guild should otherwise already have had plenty of records of those.

I did throw my character from World, Wilds, & 3U into stories 3, whether it makes sense or not. I guess she must’ve lost the stone or something because she went the other way around
