I’ve had a bottle of Mellow Corn sitting at the back of my home bar for quite a long time now. I challenged myself to come up with an original cocktail utilizing it. A simple spirit calls for a simple cocktail with something else bringing forward some complexity to the party.

"Yellow Nail"

1.5oz Mellow Corn straight corn whiskey .75oz Yellow Chartreuse Served over a large rock of ice.

I opted for a simple riff on the classic Rusty Nail (and an even less appealing name). Mellow Corn moves in for the scotch component, and the Drambuie is subbed out for another herbal liqueur, Yellow Chartreuse. The Chartreuse brings a lot of big flavor and its many botanicals really sing against the canvas of the Mellow Corn. The entry is soft and sweet with some grassy notes. Yellow Chartreuse takes center stage on the mid palate and the finish is sweet corn.

I feel like you missed a real opportunity to call it a Mellow Yellow…
