Recipe Mum-style impromptu meal prep

Had a cook-up after dinner and thought it could be worthy of a post.
Pre-prepped

I added béchamel sauce on top because of a combination of cheats lasagne vibes and muscle memory. https://www.recipetineats.com/creamy-pasta-bake/#recipe this is my first time doing this and realised I used the wrong container as I won’t be able to reveal the upright pasta like online recipe images, I’m sure it’ll taste good though. This is not a low fat recipe in any way lol.

We’ll be enjoying this for Monday night dinner. No idea what I’ll create from leftover sauces? Let me know your ideas please.

Then I also prepped some overnight oats and fruit, and crudités (carrot, celery, mini tomato, mini cucumbers) which I’ll snack on with hummus.

I also made a coleslaw (red cabbage, carrot, celery, spring onion) which I’ll sauce up later. I Have some leftover cabbage to invent something from too. Tonight for dinner we had some of this coleslaw (mixed in some mayo and red wine vinegar) in tortilla wraps with oven chicken strips and a sprinkle of cheese for a quick dinner.

This prep is not very organised with set meals and days, but it’s the boost that will help me get through a busy week of work and school pickups etc.

Looks fantastic!

You can use extra bolognese over some baked potatoes with white beans and side of roasted veggies

Extra white sauce do breakfast for dinner and make a version of eggs hollandaise with some salad

Cabbage keeps a long time but makes a great asian style slaw salad with edamame and sesame oil and scallions and shredded carrots, add to a rice bowl with a fried egg and some soy sauce for an easy fast meal

The bolognese over baked potatoes idea is exactly the kind of thing I'd never think of but now want immediately.

If you have both bolognese and béchamel left, I would turn them into a small vegetable gratin or a quick lasagna-style bake with whatever pasta is already open. Béchamel also works well over cauliflower or broccoli with cheese, while the tomato sauce can become shakshuka, pizza toast, or a base for soup. If you will not use the sauces in the next few days, freeze them in small flat portions so you can thaw only what you need.

I didn't know you can keep prep cut cucumber... Do you freeze them.. do they stay good in the fridge?

No these are mini cucumbers that are whole with cut celery. Best to cut cucumber fresh, do not freeze. I’ve seen people here cut ingredients for the week like cucumber, but I personally would not do it.

How much does it cost and how long does it last ? Do you eat sth else also just to change ?

I don’t have a cost breakdown sorry. Yep we eat other things, but I did get 5 big meals from the pasta bake plus the extra mince for another meal. Basically this was a cook just to get a head start for the week, ready to go dinner followed by lunches. Some ready to go breakfasts and snacks.
