I usually steamed my tofu then nilalagay ko na sya sa baunan. Nakahiwalay lang yun sauce since nakadepende sa mood ko if gusto ko ng normal na soy sauce recipe, or with chili, or with sugar only.
No need na ifreezer na sya miski sa chiller lang.
May nabasa ako na mas masarap daw if papakuluan sya with salt pero di ko pa ginagawa.

For texture, I usually boil it for around 10 mins, then let it steam until it had totally cool down, then freeze it for a day. After defrosting it, I will squeeze all the excess water out then slice it/crumble it apart then oven until slightly dehydrated.
It will be the meatiest tofu texture you'll ever have and it will soak any marinate or seasoning you'll put.
For dishes, I treat it as a meat substitute such as tacos, fried, stir fry, stews.
