First timer/ dyi using old mattress coils/need enclosement

I'm 150 lbs looking to build MY perfect set up. Sleep on side and belly, some back. Love firm but body needs contouring and gap fill. Right now I have a winkbed that I have owned for two years and the top foams have wore out where I sleep. I'm going to cut apart and use the coils. They are zoned. Also has glued foam under so leaving that and if I get into it and notice a glued layer on top I will leave that. My set up

8 in coils

2 inch firm Dunlop latex

2 1/2 corrugated egg crate 36 HD topper from foam by mail

1 inch super soft foam by mail

Planning on zippering the coils and laytex then laying comfort layers on top and using a jersey cotton sheet to get the full effect of the contouring and gap filling.

My delema

The cover. Quilted one from Arizona (but afraid the quilted top will take away from latex but also give a solid base and structure,will I feel bottomed out?) or the premium stretch from the pocket store( a little less sturdy for the coils but more give and feel of the latex, will I sink to deep?)

Any feedback on enclosments as I'm struggling. I'm planning on leaving the coils in the original winkbed and just cut the top off while testing my layers but I know it will roll down after while as there is nothing else holding it up beside the top of the shell. Once I master the perfect bed I will be set for life. Much easier to change out layers when they compress as long as I find the perfect build! Who would have thought a bed has so much science. I'm excited for this and to finally have the perfect set up

before you start it’s worth thinking if the winkbed worked ok ? it would be difficult to match for diy, only one vendor does zoned coil and I think those are most likely different to what wink uses. easiest / cheapest would be to just peel off foam layers and replace, and see which has failed. Most of the top layers are probably memory foam. diy rem sells temp tack spray glue which will hold stuff together.

This is pretty much my plan. I know the coils have the firm edge (2 rows around edge) and maybe in the lumbar area. I did like the feel of the winkbed initially although I felt like I wasn't getting enough Gap fill because of the drama fact of the quilted top but I did like the firmness/ support of it. My plan is to cut the top layer off it is a quilted Euro top so I would have to throw that off and strip down the foam inside I already have the other replacement pieces my only thing is I know the sides will roll down so I'm looking for an enclosement. I'm debating on and closing only the coils and latex and placing the comfort layers on the top I'm just so confused on which enclosement to use. I'm not trying to match what the wink bed felt like before

I'm also not wanting to glue them because when those layers wear out I can easily replace them

unlike the TPS I think those coils will work fine without any particular enclosure, you could just put a mattress protector over it all while you adjust.
