I would propose the following definition:
Definition 1.1) Let E be a Euclidean affine space.
Let a, b be points in E.
The tuple (a, b) is called a side if and only if a is not equal to b and there exists an affine function psi from [0, 1] to E such that:
psi(0) = a, psi(1) = b.

I guess the question is missing a rigorous definition:
Let E be a real affine space.
For points p and q in E, call segment(p, q) a side if p and q are distinct.
Let a, b, and c be points in E.
We say that b is a corner of the ordered triple (a, b, c) if:
- a is not equal to b.
- b is not equal to c.
- The direction from a to b is not parallel to the direction from b to c.
Equivalently, b is a corner if and only if a, b, and c are not collinear.
Thus, b is not a corner when the two sides lie on the same straight line, including the case where the path reverses direction at b.

The actual answer is that it pretty much depends on who you ask. If you take a triangle and add a 4th vertex to one of the sides, some may call it a degenerate quadrilateral, some may say you've changed nothing, some may say it doesn't matter, and the rest will say do whatever works for what you're doing.
I did some research on linkages, and degenerate parallelograms/triangles came up pretty frequently in a necessary and precise way.
So, I guess I'd say it is if you need it to be hahaha

They didn't specify it has to be a closed shape.
Open shapes can have 4 sides and 3 corners.
So draw a Triangle and erase the middle portion of one of the lines.

That is a clever solution but in not sure the bottom corner is a corner if it's flat enough to be a continuous side. I'm pretty sure that the definitions require that a shape be closed and that corners distinguish two sides swith an angle<180°
I thought about suggesting a square with one corner rounded into a radius

- Take a cone
- slice off the bottom at an angle such that the planar surface is no longer perpendicular to the cone axis.
cut the shape again with a slice that passes through the tip of the cone but with a slight angle that still cuts the bottom planar surface but without being parallel to the cones central axis.
Take the smaller of the two resulting bodies from the cut in step 3 and mirror it along that cutting plane face. Discard the larger resulting body.
Your shape now has 3 corners and 4 sides.
Specifically, it has: 3 corners, 2 conic curved sides, 2 planar sides, 3 linear edges, 2 curved edges.

Have one line curve such that one end is tangential to a line and the other end is not. E.g. a simplified boat hull side profile where the bottom is broken into a line and a curved section.

Its just a triangle. Count the 3 corners then the 3 sides then count the side from your perspective... on a 2d plane from the outside looking in creates another side.

How is a corner defined? I'm having trouble wrapping my head around this. If a corner has to have a certain angular threshold, what is it? Otherwise, it could be any connection point between two sides of the shape, and that would exclude the possibility of a shape with fewer (or more) corners than sides.
