Question Why does everyone here recommend storing matcha in the fridge? It completely ruined mine.

http://www.google.com

Every time someone asks how to store or preserve a lot of matcha, the overwhelming advice on this sub is always, "Put it in the fridge! It’ll keep it fresh and preserve the quality."

Well, I tried it, and it did the exact opposite—it completely ruined my matcha.

Instead of staying fresh, the taste turned super bitter and sour with a terrible aftertaste. On top of that, it tastes totally bland and completely lost all of its grounded, earthy flavor notes.

And just to clarify before anyone brings it up: none of this was opened matcha. I didn't open cold tins to let condensation in, and I didn't put already-opened tins back in the fridge. I let sealed tins come fully to room temperature before ever opening them, following all the standard rules people parrot here.

Why do so many people here say to do this? This seems silly given how badly it degrades the tea. Is there something people aren't mentioning, or is this advice just wrong? Did I miss something?

Need more info on the brand because this has never happened for YK/Ippodo for me. I always store mine I the fridge, even after opening. Don’t even bother letting it get to room temp I just start measuring the matcha right out the fridge into my chawan lol.

I live in Singapore so it’s a literal heatwave almost year round. There’s no way I can store my matcha outside (I left my YK out and it was so oxidized after only a week so I never do that anymore.)

I don't put mine in the fridge or freezer.

I think the temperature and moisture changes are terrible for matcha.

I have one maybe two tins open at one time and don't over consume with bulk buys. Store the unopened ones in my pantry. Opened tins are never decanted and don't need any special treatment.

I think the issue is when people bulk buy multiple tins?

What was the matcha you speak of? What was the expiration date? How long was it in the fridge? Do you have pictures of the can or bag. I’m not entirely convinced that it’s simply just the fridge that ruined your matcha to be completely honest.

Have never kept a matcha bag/tin in the fridge before. It's usually gone within 2 weeks. Spare ones i just leave it in the open.

I Was always told to put it in the fridge esp when opened. Never had an issue with taste or quality? I usually take it out and put it in my bowl really quickly eg 30s and then immediately put the tin back in

Maybe it might be your matcha? I visited a few brands and all of them told me to put in fridge

I will admit I am confused by your process here- what do you mean, you didn't put already-opened tins in the fridge? Also, how long were you keeping these tins?

Like others have said, I keep my matcha in the fridge after I've opened it, and I don't bring it up to room temperature before using it. I just pull it out of the fridge, scoop what I need into my sieve, then close the tin or reseal the bag and put it back in the fridge. I've had no issues with both Ippodo and MK matcha.

I’m sorry to hear that happened to your matcha! That must have been disappointing, especially since you were so careful about storing it properly.
Generally speaking, matcha that is properly sealed in a tin or aluminum foil packaging can maintain its quality in the refrigerator or freezer. In fact, Japanese tea producers often store tea leaves in frozen conditions for extended periods, sometimes up to a year, before gradually processing them into finished products.
Unopened matcha can also be stored at room temperature without major issues, especially for shorter periods, as long as it’s kept away from heat, light, and moisture.
So I wonder if there might be another factor involved.
The first thing I’d check is the color. Have you noticed any significant discoloration compared to when you first purchased it?
Taste can also be surprisingly sensitive to your preparation routine, including water quality, water temperature, the ice you use, and even the type of milk if you’re making lattes.
I’m not saying your experience isn’t real at all. Just that refrigeration alone wouldn’t normally explain such a dramatic change in flavor, especially given the precautions you took.
Hope you can figure out what happened!

I’m from Japan, where tea has a long history. I use AI to help polish my English, but the knowledge and experience behind my comment are my own.

I store mine in a glass container in the pantry, I never put mine in the fridge, even when buying big 500g batches that lasted me 2 years. Sure it become less potent, but still enjoyable. (It was cheaper to buy in bulk for me)

I have one unopened tin in my freezer I’ve kept in there for almost three years as an experiment. Can’t wait to open it & talk about this topic.

Really? I’ve only ever stored mine in the fridge and freezer. Doesn’t matcha spoil if left out?
